My Vegan Potato Tacos

After doing a poll on Instagram asking which recipe you guys wanted to see next, my Potato Tacos came in first place by a landslide! I am happy to present to you my vegan potato tacos with homemade pico de gallo, these tacos are a fun and yummy twist on regular tacos. Something to note is that the Red Cayenne Pepper and the Smoked Paprika mainly contribute to the spice in the potatoes, the more you add of those the spicier they get. This is why I only add a small amount of regular pepper because they are already loaded with spice prior, plus I have a low tolerance for spice. I hope you enjoy these mildly spicy, tasty and delectable tacos!

Ingredients for the Potatoes:

  • 2 Organic Golden Potatoes

  • 2 Tablespoons of Extra Virgin Olive Oil

  • 1/2 Teaspoon of Garlic Powder

  • 1/4 Teaspoon Onion Salt

  • 1 Teaspoon Ground Cumin

  • 1 Teaspoon Smoked Paprika

  • 1/2 Teaspoon of Red Cayenne Pepper

  • 1/2 Teaspoon of Pink Himalayan Salt

  • A pinch of Pepper

Instructions:

  • Wash and dry potatoes

  • Cut Potatoes into small chunks and toss into skillet

  • Drizzle the Olive Oil over the potatoes and add all spices

  • Turn heat to medium and let potatoes cook for 15 minutes

  • After 15 mins, turn the heat to low and cook for another 5 minutes

  • Stirring potatoes every few minutes so they do not stick to the bottom

  • As you reach the twenty minute mark poke your potatoes with a fork to see how soft they are, once they are to your desired softness, go ahead and turn the heat off

Ingredients for rest of Tacos:

  • 1 Organic Avocado

  • 1 Red Onion

  • 1 Organic Lime

  • 1 Roma Tomato

  • Cilantro

  • Vegan Corn and Wheat Tortillas

How to make the Pico De Gallo:

  • Slice and dice the tomato and add to a bowl

  • Cut the lime in half and drain it into the bowl with tomatoes

  • Cut 1 1/2 slices of onion and slice n dice, add to bowl

  • Grab a bunch of Cilantro and chop finely, add to bowl and stir with a fork

  • Lastly, top with 1/2 teaspoon of salt and 1/4 teaspoon of pepper

Lastly:

  • Cut open Avocado and slice and dice

  • Add potatoes to corn tortillas

  • Add pico and avocado to tacos

  • Top with more lime or cilantro if you please
