My Vegan Loaded Romaine Salad

When I say loaded, I truly mean it’s loaded with the goods, not only does this salad taste savory but it leaves you feeling full. This is my go-to salad when I’m craving a little bit of everything, specifically it includes avocado, tomato, onion, bell pepper and cucumber! This salad is also flexible meaning that if you want more or less of one veggie, feel free to adjust it yourself! I’ve never been a huge salad eater but I feel like the deeper into adulthood you get eating salads becomes more appealing to you, anyways I always felt like there wasn’t a perfect salad with everything I liked. This search for the perfectly created salad lead me to construct my own Loaded Romaine Salad, and I couldn’t be happier. Unlike other salads that still leave you hungry, this salad is rather filling, which is another reason why I love it so much. Try it and let me know what you think!

Ingredients:

  • 2 Cups Organic Romaine Lettuce

  • 1/2 Cup of Organic Tomato diced

  • 1/2 Cup Mini Organic Cucumbers

  • 1/2 Cup Organic Bell Pepper

  • 1/2 Cup Organic Sweet Yellow Onion

  • 1/2 Organic Avocado

  • 1/2 Teaspoon Himalayan Pink Salt

  • 1/4 Teaspoon Black Pepper

  • 2 Tablespoons of Trader Joe’s Tuscan Italian Dressing

Instructions:

  • Wash and dry the Romaine lettuce, remove the outside pieces that are damaged. Cut the stub off at the bottom about an 1 1/2 inches down. Cut lettuce into half inch slices.

  • Wash and slice a large organic tomato, and dice

  • Wash and dice one whole mini Persian Cucumber

  • Wash and remove the stem and seeds from the Bell Pepper, and dice

  • Cut off the opinions stem and remove the papery layers down to the first layer of the onion, slice and dice

  • Halve and remove the seed from the avocado, cut vertically then horizontally and removes chunks with a spoon.

  • Add all ingredients into bowl, top with salt, pepper and dressing

  • Enjoy!

P.S. This salad also goes great with Balsamic Vinaigrette
