First off, this pizza is a game changer let me tell you, not only is it not your average pizza but it complete re-invents the wheel when it comes to pizza. The pesto, tomato and basil will leave your taste buds wanting more, not to mention the garlic and herbs which need I say more? Not only is this lovely dish vegan, but it is super easy to make even though you’re making it from scratch. I always thought pizza was complicated to make and basically would avoid making it from scratch at all costs, but not only is it easy but it’s also fun! I found this lovely recipe from Pinterest, which I will link down below however, I have tweaked it a bit and added some of my favorite flavors to personalize it even more. Let’s get started and I promise you will be thanking me later!
Ingredients:
Garlic and Herb Pizza Dough 16 oz
Small Handful of All Purpose Flour
3 Cloves Garlic Minced
2 Slices of Sweet Yellow Onion
1/2 Cup of Vegan Kale Cashew and Basil Pesto Sauce from Trader Joe’s
8 Slices of Tomatoes or 1 1/2 Tomatoes Sliced
Drizzle of Spanish Organic Extra Virgin Olive Oil
1/2 Teaspoon of Pink Himalayan Salt
1/2 Teaspoon Black Pepper
1 Cup Organic Arugula
1 Handful of Basil Chopped
1/4 Cup Dry Toasted Pine Nuts
Drizzle Balsamic Glaze
Instructions:
Preheat oven to 475 degrees
On a large flour coated cutting board spread the dough to your desired pizza shape
On a large flat cookie baking sheet spray a non stick, I used the Spanish Organic Extra Virgin Olive Oil Spray and place your dough on the sheet. Drizzle regular Spanish Organic Extra Virgin Olive Oil on dough and add the pesto, keeping 1 inch of the edges free of pesto as that will be the crust
Place your slices of tomatoes and spread out the onions, minced garlic, salt, pepper
Place the pizza in the oven for 15 Minutes
Remove Pizza from oven add Arugula, Basil, Pine Nuts, and Balsamic Glaze to top
Cut and Enjoy!
